The "Play With MY Food" Cooking Contest Winner: Eggchilada Category!

Congrats again to Joy M. who won the protein category with her “Chocolate Coffee Caramel Brownie Protein Ice Cream” recipe.

Now it’s time for the winner of the Eggchilada category. We got a lot of great entries for this category but our judge, Pepper, sent me this picture of the recipe she chose as the winner.

Here’s what Pepper had to say about the winning recipe.

I really liked how Stephanie included protein and vegetables. The recipe was easy to follow but packed with flavor.

I love Greek flavors and will now be adding the sauteed garlic and spinach with my Greek Egg Salad. It was amazing how something so easy really bumped up the flavor of her dish!

Here’s Stephanie’s original picture and recipe:

Ingredients:

• 1 large egg
• 1 tsp cold water
• 1/4 c feta cheese
• 1/8 tsp minced garlic
• Large handful of fresh baby spinach
• 1/2 tsp olive oil
• Cooking spray 

Directions:

1.     Whisk together egg and water. Cook on medium in a small pan until cooked through.

2.     While egg is cooking, add olive oil and minced garlic until golden to heated pan on medium. Add spinach to garlic and cook until the spinach is cooked down (approx 1 minute). Please note I like to tear my spinach as I am putting it into the pan to make it easier to eat.

3.     Once the egg and spinach is cooked, add feta cheese and spinach on top of egg and fold over.

Not to sound like a broke record but - PATIENCE! - I find when I rush downloads there's a whole sub-sector of people unable to access the download so I'd rather take a bit of extra time and get it right (or as right as I  am capable of getting it) than to rush!
